2 tbsp olive oil
2 tsp crushed red pepper (this gives a nice heat to it. Make 1 tsp if you don’t like spicy heat)
3 tsp cumin seeds
1 onion diced
2 cloves garlic, minced
1.5 c yellow lentils (not yellow split peas. you may have to get them at the health food store or Indian grocer)
2 c veggie broth
2 c water
1 tsp turmeric

1. Saute crushed red pepper and cumin seeds in oil for a minute on medium heat
2. Add onion and garlic and saute for 2 minutes
3. Add lentils, liquid and turmeric and cook on med-low heat for 20 to 30 minutes stirring occasionally. It will thicken considerably.

Serve over rice. I like brown rice – better for the hips.
