4 cups potatoes, cut into 1 inch cubes
3 cups leeks, sliced (white parts only)
2 quarts vegetable broth (or chicken broth)
1 tsp salt
3 tbls chives, chopped
½ cup cream (optional)


  1. In saucepan, add broth, potatoes, leeks and salt. Cook 35 to 45 minutes until potatoes are soft
  2. Add mixture to food processor and blend until completely smooth. If adding cream, do so now.
  3. If necessary, salt and pepper to taste. Sprinkle chives on top.
