4 cups potatoes, cut into 1 inch cubes
3 cups leeks, sliced (white parts only)
2 quarts vegetable broth (or chicken broth)
1 tsp salt
3 tbls chives, chopped
½ cup cream (optional)
- In saucepan, add broth, potatoes, leeks and salt. Cook 35 to 45 minutes until potatoes are soft
- Add mixture to food processor and blend until completely smooth. If adding cream, do so now.
- If necessary, salt and pepper to taste. Sprinkle chives on top.
